I don't have an iMac, but I do have a macbook Pro with OSX 10.5 (Leopard), and a G5 workstation running on 10.4 (Tiger). Both machines have served me well. The BSD Unix (Mach) backend is very stable, and the Xwindows interface works great. The newer Intel based Macs can even truly dual boot between Windows and Mac OSX. Additionally, Macs are more secure and less vulnerable to worms, trojans and other malware through its obscure nature.
However, although Mac OS are perceived by some as easy to use, a seasoned Microsoft Windows user will still have to re-learn how everything works. Additionally, there are not as many software packages available for Macs as there are for Windows, and due to drastic modifications and additions of various APIs through Apple's operating system development, compatibility between older Mac software and the newer OS is horrible.
I am not sure what your technical level or usage requirements are, but typically, I would recommend for you to stay with Windows if that is the Operating System you are familiar with.

Stick with windows. I use both eMacs and Imacs on a regular basis and they just don't compare to a good Windows XP PC.

Vista is OK. MS focused much on security with this iteration of Windows, and Vista is perhaps the most secure Windows yet. However, in order to achieve the new security standards, the Windows OS was changed drastically. Since much of the OS Kernel was reprogrammed with xml, Vista sometimes lack the compatibility when compared with its predecessors.
The two versions of Vista you will encounter most are Vista Home Premium and Vista Business, Home Premium has the Aero package, Media Center, HD movie maker and most of the aesthetics installed, while Business has EFS, shadowcopy, dual processor support, and advanced networking and business capabilities. Vista Ultimate has all of the features of Vista enabled as well as TPM support through Bitlocker. For a regular home user, you should consider Vista Home Premium. If you like to tinker around, then get Business. In my opinion, Ultimate is not worth the price.

Think im gonna take the plunge myself soon. My current laptop is on it's way out and have been thinking about splashing out on a Macbook. Hopefully there wont be that much of a learning curve.
I cam across this site a while back now and bookmarked it - looks really helpful for new mac users:

Yeah but who actually pays for windows operating systems? We got XP Pro for free from a friend and we owned a legal copy of windows 98, but other than that they've pretty much all be illegal copies.

I still have to pay for all of my software due to my profession. I guess if price is no issue, then certainly go with Vista Ultimate. However, be aware that many of the pirated versions of Vista are pre-loaded with trojans, worms and/or rootkits, and you might end up joining a botnet or worse, get your personal information stolen. I guess if you are planning to go with the pirated software, then be sure to get a reputable version.

Indeed those are issues but I run AV software and rootkit revealer so I should be safe. As soon as I can get a copy of vista free from my legal source then I'll do that but I'll probably be stuck with a pirated copy for a while.
EDIT: Also my pirated copy was downloaded very shortly after vista was released. I got it so early in the hope that people wouldn't have had time to develop vista trojans, zombie viruses or rootkits. But I'll still be careful.
