I thought the more expensive cables had better shielded wires, thus is less susceptible to noise, interference, and signal degradation, at least that was the case for component cables. Although I am not sure how much more extra shielding is going to help with HDMI's digital signals. In my opinion, you don't need to buy the $100 cables unless you are planning to place your Playstation far away from your TV set. if you are only using a one meter cable to connect your Playstation to your TV, then you should buy the cheapest cable you can find, since signal interference is minimal at a short distance anyway, not to mention the digital signals has very low vulnerability to noise or interference, since the data is nothing but 1's and 0's.
